Banana Bread Baked Oatmeal Bars

"This is the perfect breakfast for those days when you really want a muffin but need something hearty and healthy like oatmeal. For the best flavor use a very ripe banana. Any fruit can be substituted for the banana, including dried fruit (cranberries!) and nuts. The bars are great the next day, too. Once cool, put the bars into the fridge, then pop them in the microwave for a few seconds before eating."

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8-inch square baking dish.
  2. Beat applesauce and white sugar together in a bowl. Add oats, milk, eggs, baking powder, and salt to applesauce mixture; beat until evenly mixed. Stir banana into oat mixture. Pour batter into prepared baking dish.
  3. Stir brown sugar and cinnamon together in a small bowl; sprinkle mixture over banana batter.
  4. Bake in the preheated oven until firm, 30 to 35 minutes. Cool for 5 minutes before slicing into bars.

This was great. I added 2 bananas because they were small. This was perfectly sweet for my taste buds.

Very tastey. I had some slightly overripe bananas that I wanted to use up and I wanted something healthier than bread. It came out great. A few changes though: I had no applesauce so I left that out, I used 3 mashed bananas and 1/4th cup honey instead of the sugar, then I added a little nutmeg to the brown sugar/cinnamon mix. Def will keep thisin mind next time I have bananas

I had recently made Beckys Baked Oatmeal, from this site, and really liked it. I wanted to see if I could find a similar recipe with less sugar. This recipe had half that. It just didnt work for me. Personally, I felt it wasnt quite sweet enough despite finding most foods with sugar too sweet. It also had a more gummy and rubbery texture that was almost slightly eggy tasting. I only have the comparison of the one recipe, though, which went over very well in my home.
