The name of this recipe says it all, except that escarole is accompanied by romaine and bib lettuce. A flavorful, vinegar and oil dressing with lots of Parmesan cheese finishes this wonderful and healthy salad beautifully.

My ladies group at church printed a cookbook several years ago, and this recipe was in the book, with no name attached. I serve it over mixed greens, drizzle it over sliced tomatoes and cucumbers and even use it as a dressing for coleslaw. -Gay Nell Nicholas, Henderson, Texas

This zippy recipe is one a friend shared years ago. I like to give the dressing to others in jelly jars trimmed with baling twine.

This refreshing, easy-to-mix salad dressing scores big with Kathryn Anderson's family and friends in Wallkill, New York. The creamy blend adds big dill flavor to garden-fresh salads, yet it's thick enough to use as a lively dip for raw veggies.

All of my favorite salads are topped off with this homemade dressing. I use this sweet poppy seed concoction to drizzle over fruit salads with strawberries, grapes, oranges and bananas...or over spinach and toasted pecans.
