I followed the advice of others and kicked the breading up a notch by adding cayenne pepper and garlic powder. It makes a world of difference. This is a great and healthy sidedish; I didn't find it necessary to add oil of any kind.

These were great! I bought Italian seasoned bread crumbs, so I didn't add any additional seasonings to that mixture. I added closer to a 1/2 cup of Parmesan cheese. I also sprayed the tops with cooking spray as other reviewers suggested. This made the chips crispy. These were devoured by my guests. I served with ranch dressing for dipping.

These "chips" are awesome. My husband now loves zucchini. I've passed this recipe along to friends. Everyone agrees -- it's the best. I do what the other reviewers' said -- spray with cooking spray (olive oil spray) for crispiness.

The first time I made these, I followed the directions exactly and the zucchini chips weren't terrible, but seemed to be lacking something. The next time, I doubled the parmesan and added garlic powder and basil. I also experimented with the thickness of the slices, finding that thinner was crispier. I'm glad I gave these a second shot becasue they turned out much better

We all loved these. I cut the zucchini lengthwise and used italian bread crumbs with the parm. Will definitely make again. REALLY EASY!

Okay so the reviewer who said you should double dip them is right on. Also these on their own are kinda bland but then again who eats fried zucchini without a dip? These I think are no different. I made a cucumber Tzaki (dont know how to spell it) dip and my husband went nuts over these even my no veggie 2 year old ate one. We will definately make again but always with some sort of dip.

Any fan of Carl's Jr's fried zucchini will definitely appreciate this low cal, low fat alternative which is almost just as delicious. I took another reviewer's advice and added a few dashes of sriracha sauce to the egg whites. So delicious but the crispiness doesn't hold up overnight so it's definitely an "eat as soon as you can get your hands on them" type of food. They go great with a cucumber yogurt sauce or by themselves. Will definitely make this yummy snack again!

Okay...definitely cut thin to get more breading on them. Eat them when they're hot...after that, I didn't like them much. Won't make these again.

Excellent recipe. I cut mine at about 1/8 inch so I needed more of the breadcrumbs. I also added garlic and onion powder as someone had suggested. Now I just need to get my hands on some more zucchini from someone's garden.

i added garlic salt, garlic powder, onion powder, and used seasoned breadcrumbs (garlic and herb). i also drizzled the pan with a little melted butter since i was out of cooking spray (oops). i was disappointed that they weren't browned after 10 minutes, but then i remembered to flip them. a few minutes later they were done. still not as crispy as fried zucchini, but they tasted awesome and everyone had seconds. i suggest double breading next time to make them more crispy (egg, breadcrumbs, egg, more breadcrumbs). also...to coat everything faster i dump 5-6 zucchini in the bowl of egg whites, stir them vigorously to coat, then throw them one by one into the bowl of breadcrumbs and spices. i just shake the bowl until they're all covered. that way you don't have to do them one by one. using extra parmesan cheese helps with the crispiness factor too (will try next time).
