So pleasantly surprised by how tasty this was, coupled with it's ease. An easy 5 stars. The only thing I did differently was add the finest dusting of garlic powder in addition to the oregeno, salt and pepper. Will be making this many more times in the future!

These were GREAT! I loved the taste the oregeno gave the sweet potatoes. It was a welcome change to the sugary sweet potatoes I have had in the past. I will be making these again and again and again! AMAZING!!!

I made this for our christmas dinner to serve with prime rib. Turned out great. Next time I will dice potatoes into small pieces. Great flavor and alternative to using butter and brown sugar.

Finally a HEALTHY recipe for sweet potatoes. We are trying to eat healthier and I've looked at dozens of recipes that add sugar, syrup, honey, marsmellows, etc. I just want a nice easy to prepare savoury dish ad we really liked these.

These were good but nothing special or over the top. I made it to go along with thanksgiving dinner and we had mashed idaho pototes as well and I thought these sweet potatoes tasted good, but nothing to write home about. My 9 month old liked them mashed up.

This was good and was very easy to make. It was my first try at sweet potatoes and I was pleased with the outcome. I think I'm used to "Sweet" sweet potatoes, but this was a nice change.

I made this recipe exactly as written. The only thing I changed was that I cut the peices a little smaller ( 1.5 inch cubes) I covered them for the first 20 minutes then baked for an additional 30 minutes. They were SO DELICIOUS! I love oregano and I was surprised to have it on sweet potatoes, but it was fantastic. I shuffled the potatoes around 3 times during baking so that they wouldn't be hard on the bottoms.

Love this. I was looking for a healthy way to prepare sweet potatoes, and this is it. Tastes nice as written, but I now add Hungarian Paprika to give it some kick. Cayenne works as well. Also, if you want just a little sweetness to this, without making the candied version, some carmelized onions mixed in after baking tastes marvelous!

This is good and simple. Really easy too, except for cutting those darn sweet potatoes! My situation almost got out of control. Other than that, though.... And I only used two, and it makes a ton!

I tossed and coated to make sure none of the potatoes were too dry. So simple and different than all the other recipes that call for brown sugar and marshmallows. All those recipes go best with pork or ham. These are great with anything. I served this with steak. Would work well with regular potatoes, too

I was also looking for a sweet potato recipe that wasn't full of brown sugar and marshmallows. This was perfect. Everyone in the family enjoyed it.
