I was very skeptical of this recipe since I was brought up on sugar and buttery sweet potatoes but I loved these! I used olive oil, salt/pepper, paprika, and sliced onion. I didn't have any oregano but they were wonderfully tasted! The onions were crunchy and the potatoes soft although I will add a hint of brown sugar next time. I will be making these for years to come. :)

LOVED this recipe; I've been looking for a way to incorporate sweet potatoes in my diet without making the syrupy sweet version usually seen (I HATE sweet vegetable dishes!). I will try other spices but I liked the oregano. THANKS!!!

These were wonderful! Even healthier than baked in foil, because then you add butter...this way, you get your healthy olive oil in! Kids love these. I just used ground sea salt, fresh ground black pepper, a little garlic powder and onion powder, then just a sprinkling of basil. Terriffic!

Delicious!! I made this with rosemary instead of oregano. I cut the sweet potatoes up into 1" pieces and added coarsely chopped onions. I put all ingredients into a Ziploc bag and mixed thoroughly. Baked for about 45 minutes at 400. I will definitely be making again!

This is the best healthy sweet potato recipe that I've ever seen. I had a to cook the potatoes a little longer, but it probably depends on how small the pieces are.

I made these with white sweet potatoes as I don't like the orange ones, and followed the recipe, and they were very good. I shook all the ingredients in a plastic bag - so much easier than dirtying a bowl. Turned halfway - 40 min later they were done!!! Thanks for a great recipe. Update 1/21/09: I tried these again tonight with herbes de provence as I wanted to try the rosemary, but was out, and they were better than the oregano version!! Cut into approx 1" chunks, baked 325 in conv. oven for about 40 min, but prob could have done them for 30+/- min as they were too soft.

i always thought sweet potatoes were sweet because of the brown sugar and butter they usually came dripping with, but this was a delightful surprise at how good and sweet these still were with just a hint of salty side flavor

These were a nice change from white potatoes. I was looking for a recipe that didn't include marshmallows since sweet potatoes are sweet enough! And also wanted something that wasn't drowning in soup like some of the other dishes on my in-law's table yesterday. I added some onion and crushed garlic and thought that added some nice flavor. Would make again. Thanks!

I used smaller pieces of sweet potatoes and followed everything else exactly... I just thought it was kind of bland and boring. If I make it again I'll try putting more spices and salt and pepper on it.

All of my family loved these and I got a lot of compliments. I thought they were alright; needed more salt and maybe not oregano? I don't know. Not my favorite and probably won't make again unless asked.

The kids didn't really like and husband and I thought they were OK. I didn't really like the consistency, they were pretty soft, like I should have mashed them or something. Don't think I'll make again but worth trying.
