I loved this, but unfortunately my kids did not like the texture of the squash. I did saute finely chopped onion and mushrooms and added basil, oregano, parsley and some steak seasonings. I also used velveeta as I had it on hand to use. I also recommend simmering the beef, sauce and seasonings for an hour if you have time, then add the squash and cheese until melted, then bake which just adds depth to the flavor.

My family really liked it, they would not have known it wasn't pasta if I hadn't told them. Great way to get veggies in the mix.

I thought this recipe was really great. The spaghetti squash is a nice change from the usual. I did use shredded chicken, however, and it tasted good, as I'm sure beef would, too.

Great recipe for using spaghetti squash. To make it easier to cut the squash, cook whole in microwave for five to seven minutes. Take out, cut, and return halves to microwave to finish cooking another 10 to 7 minutes or so. This is so much easier than trying to cut through a raw squash. Save seeds. These are delicious baked in the oven with a little salt and/or pepper or seasoning of your choice.

This is an awesome recipe that you can make so many variations of! I used diced chicken and added fresh mushroom, doubled the onion and I used Rotel tomatoes for some extra spicy to it. Both me and my somewhat picky husband LOVED it! I don't think I'm ever making another noodled caccitore or even spaghetti for that matter. Next time I'm going to use mexican/taco spices and mexican cheese for a south of the border variation.

A great alternative to pasta! I am a low carber, and was looking for a way to make spaghetti without cheating. I am so glad I found this recipe! What I did differently after scraping it out was put everthing together like I would make a big pot of spaghetti. This reminds me of angel hair pasta. I now have another superb low carb recipe.

This was great! I had never made Spaghetti Squash before so it was quite the adventure! A great light alternative to noodles and as versitile as speghetti, well might not work so great with alfredo!!! Can't wait to add more veggies! Oh, Definatly season to taste, I used a ton of garlic and tossed in some curry powder and extra cayanne pepper. Yummy!

Wonderful dish. It's never going to be pasta but it's a nice lighter alternative. This is a very forgiving recipe you like to experiment with your own sauce versions.

Delicious! Only minor changes to accomodate what I had on hand... no peppers, so I used a can of diced chilis. Also added a can of mushrooms and some chopped celery I needed to use up. Make sure you season it to your taste... I found I needed more garlic and pepper than called for. So good!

Everyone liked this. Its good. It is a little bit on the sweet side, which is a little odd with the cheese...and you couldn't eat it everyday. Its too much. But, we have way too many spag. squash, and are making every recipe we can find, and this is one of the better ones.

Wow! Wonderful dish. Did some tweaking to work with what I had in the house. We used 1 pound of venison and 1 pound of mild Italian sausage and doubled the tomatoes. I also added mushrooms and some chopped zucchini. We will definitely make this one again!

We enjoyed this variation,however I transfered all the ingredients back in to the shells and used provolone cheese instead of cheddar. Very delicious.

Pretty good! My husband loved it! It was my first time making spaghetti squash, and I thought it was pretty cool. My three year old would have eaten more of it if it hadn't been for the tomatoes. Thanks for the great recipe! Oh - hint - I cooked the squash about five minutes less, so that it wouldn't be too soft to mix in with everything.
