I did not try this recipe, but do not think it would turn out very well, simply because it contains too much rice, and not enough liquid....I make rice pudding which everyone loves, and this is how I do it.
1/3 cup long grain white rice (raw)
1 1/2 cups 1% lowfat milk
1 1/2 cups half and half
1/4 cup white sugar
1 teaspoon vanilla
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
Bring milk and half and half to a gentle boil on stove in medium saucepan. Reduce heat to low, and add rice. Cook this mixture covered over low heat until thick and creamy, stirring occasionally to prevent rice from settling. When mixture appears thick and curdled, remove from heat, and stir in sugar, vanilla, and spices while hot. Let stand about 15-30 minutes, and chill. Serve cold with whipped cream if desired. I got this recipe by tweaking the recipe which appears in the "Better Homes and Gardens Cookbook" for "Saucepan Rice Pudding."
