I love this soup! I have never really liked baked potato soup before because its always so heavy and unhealthy feeling. This one is light and healthy. I changed the half and half to skim milk and used both chicken and beef broth (both light versions) and also followed some other recommendations and used 4 tablespoons of flour instead of 3 and it turned out great!

Very good soup recipe. The kids loved it topped with some chedder, bacon and green onions. I diced the potatoes, coated them lightly with olive oil, salt and pepper and roasted them at 350 degrees till they are 2/3rd cooked. I didn't have any dried basil but added some fresh nutmeg, which gave it another layer of yumminess. Will definitely make this recipe again... Soon.

Loved it! Took the advice from other reviewers: no salt, cut basil in half and added an extra potato. The only other thing I did differently was to cook diced potatoes in the chicken broth until done rather than bake the potatoes. I also added cheese to the soup right before serving. The family loved it and I will definitely make this again.

Loved loved loved the soup! Made a few slight changes to the original recipe. I cooked the potatoes in the microwave for 5-6 min. with a drizzle of olive oil. Added 4 medium potatoes, used 1 T. of cornstarch to thicken the soup up instead of flour and topped soup with sliced green onions. The kids raved about how good it was too! Will definitely keep this recipe around.

Excellent potato soup! Love the base, with the onion and garlic and chicken broth - yum! Only thing I changed, I added a bit more potato because I like chunky soup. Thanks Kristi for the recipe!

Really, really good. Excellent flavor and texture. I didn't change much, other than to cut down on the basil, per other reviewers' suggestions. My husband really liked it, too. I wish I would have doubled the recipe.

Absolutely fantastic! I just fixed this for tonight's dinner. The husband said it was the best potato soup that he'd ever had. The only changes that I made: added more hot pepper sauce since we like our food spicy and afer the soup was completely done,I pureed it w/ an imersion blender. A wonderful recipe!!! Wish now that I had doubled the recipe!!

This is very good soup, I even goofed and used baking potaotes (un-baked) and it still worked out, just had to cook for a while before I added the 1/2 and 1/2.

Absolutely delicious! Only changes I made were to boil potatoes in the broth instead of bake and add extra tablespoon of flour. It was sooo good! Whole family ate it up entirely. Gonna put this one in the rotation.

This was probably the best soup I have ever made!! I was a bit leery since my husband loves me ' usual' potato soup- but he raved about it- and he is not one to make many comments about what I make for dinner. I loved the little bit of kick from the hot sauce. The only thing I will do differently is to leave out the salt- it was plenty salty with the bacon. I did halve the basil per the other reviewers recommendation. It was a bit thin- next time I will add in a little instant potatoes and add some cheese to thicken it. I chopped the potatoes, left the skins on and boiled them to save time, which worked fine. I am definitely going to make this again!!

I made the roux and then set it aside. Simmered the cut, baked (microwaved potatoes) in the onion, garlic, and broth. Added extra ground red pepper, because we like it spicy. Put it all together and voila! :) We loved it!!! :)

This was an excellent recipe! My family really loved it. I tasted it prior to adding the cream/sour cream that one of the other reviewers had recommended, and it was very good as well. That would certainly cut down the calories. Next time I will half the amount of the cream component. This will definitely become one of our favorites.

Easy, tasty recipe. I tripled everything - but DON'T triple the half and half. I made that mistake the first time and it was just too much. The bacon grease makes such a huge difference to the taste, however I made without (vegetarian style) and needed a little more spice in the absence of the grease. Good recipe.

Really good! I saved a lot of time and cleanup on this recipe by using the pre-cooked 'Real Bacon Pieces' in a jar (by Hormel - little glass jar) and mixed it with the Onion and Garlic when sauteing. Worked just fine and much less cleanup. Plus you can save a lot of time by pre-boiling your peeled-cubed potatoes for about 10 mins then draining and adding - then use that same pot to add broth and other ingredients to. Also I prefer a little less garlic-onion taste so that I don't taste it as much afterwards (think burp like scampi) so I tone down slightly on the onion-garlic - but it's personal preference. Wasn't too hard and excellent taste!
