This soup is to die for. I did make a few changes...I used more bacon grease and bacon. LOL I put the cubed potatoes in raw instead of baking first and simmered until they were tender. I also added some frozen mashed potatoes to make it thicker. (I used Schwann's, but Bob Evans or leftovers would work as well) I added one cup of shredded cheddar ( 2 cups if you're doubling the recipe) and the bacon in with the cream. It's worth doubling the recipe. I'm sure it would freeze well, but my leftovers didn't last long enough. My kids loved it too. That's always a plus.

AWESOME!! I made it as is....minus the bacon (don't eat pork) & used Organic chicken broth & wheat flour. YUMMY!

This recipe was so easy to make and turned out wonderfully! I used sour cream instead of Half and Half. Since we really love cheese and bacon, I also added quite of bit of both directly to the soup instead of just using it as a garnish. I also used about 1/2 cup of potato flakes for thickening purposes. Yum!

Very flavorful. I did not have half & half so I used evaporated milk directly in its place. I had no fresh onions so I used about a Tablespoon of dried chopped onion (I don't like too much onion flavoring). I also used the Colby/Monterey Jack Cheese on top and I personally didn't put any parsley on top. It was perfect for a cool day. I served with bread and butter which went just fine with it.

A wonderful recipe! We used turkey bacon instead of regular, but other than that we made it exactly as written. We were concerned it was going to be too thin, but once the potatoes and cream were added it was perfect! Thank you for sharing.

Love it. Exactly what I was looking for. I changed it somewhat based upon what I had: (used 5 pieces of bacon & all its grease, 5 red potatoes, 1 celery stalk, 3 gloves garlic, 1.5 onions, heaping tablespoon sour cream, and just used regular milk). I used a hand held blender to puree most of the soup and potatoes. I reserved two chopped baked potatoes to add after having pureed soup.

loved it...i used skim milk and was still perfect!! my kids and husband loved it...easy and best i have found sofar..I will try turkey bacon next time. will use this one all the time!! also i nuked the potatoes prior to adding..was so time saving and wonderful!! and all my coworkers commented on how good it smelled when i took to work the next day!

Excellent base recipe. I've tried so many potato soup recipes trying to find the one that meets my (admittedly exacting) standards. I think this is the one I will work with from now on! Next time I think I'll replace half the chicken broth with dairy in order to add to the creaminess, and perhaps make a roux to thicken it more to my liking. Very easy to make in a crock-pot too!

This recipe is truly impressive. I only wish it had made more! changes (due to what I had on hand): *use 1/2 cup sour cream instead of 1/2and1/2. It would actually be fine without the creamy element, making it a little healthier. *boiled potato pieces in the chicken stock for time, convenience, and flavor. *1/4 tsp cayenne pepper instead of hot pepper sauce

This soup was delicious! I have made potato soup before, but it never turned out as good as this did. My boyfriend and I ate the whole thing - I did cook it with a little less onions, I also used about 8 peices of bacon (put some in the soup) and cooked the onions and garlic in all of the bacon grease (not just 1 tablespoon), and only used 1/2 a teaspoon of basil - thanks to some other reviewers..

Very good as is. I tripled the recipe. And happened to have some leftover ham so I threw that in but otherwise stuck to the recipe. After cooking for a few minutes, I put in in the crockpot to keep for 3 or 4 hours. Worked fine.

Very good soup! I used red potatoes since I had them on hand and increased the bacon. It's not what I would normally call a true baked potato soup.

I made a few changes when making this recipe. I added some carrots for color which I cooked in chicken broth part way before adding to the soup at the same point that you add the chicken stock. I also cooked my potatoes in chicken broth for more flavor. I also added 2 cubes of chicken bullion to the soup. I prefer my potato soup a bit thicker so I cut back on the broth by 1 C (I doubled the recipe). When I added the potatoes I mashed some of them to thicken the soup up. After cooking I stirred in more salt and pepper to taste but overall a GREAT recipe! LT

I took the advice of a couple other posts on here, and cooked the potatoes in the chicken broth. My family also loves bacon, so I added more bacon, chopped, and cooked it in the final steps. I also added about 1 1/2 teaspoons of the hot sauce (I used Frank's Red Hot). It was amazing!! Will be making again!!

AMAZING SOUP!! I make alot of soups, but this has been the best so far. I also halfed the basil and added a little more flour. I eliminated the bacon and used olive oil instead for onions/garlic mixture. I used red skin potatoes and left the skins on - like the added nutrients and the texture it adds. I cut these up into very small cubes and boiled them in the broth (vegetable broth) while the onions/garlic sauted. Just as the potatoes were done boiling I used a masher and mashed the potatoes some. Then I added the onion/flour mixture to the now not-boiling broth and potatoes, then brought it back to a boil for the 2 minutes. EXCELLENT SOUP. I made it for dinner, but don't think I will be able to wait to enjoy an entire boil! Oh, and this was very easy too!

This soup was amazing. My entire family raved about it and they all want the recipe. I added extra flour to thicken it up and I also mixed cheese into the pot in addition to sprinkling it on the top. I can't wait to make it again!!!!
