My husband and I made this a few nights ago, doubled the recipe, and fed three families. The only bad part was we didn't have enough for us to have some a second afternoon! It was fantastic and has gone into the favorites file. Now you have to understand that my DH isn't a soup fan, but I figure he was extra hungry that day because he took the initiative in the cooking. Thrilled me! He used the potato masher to make the potato pieces smaller, and I thought it was a good idea. This is a great soup. Thanks for sharing.

The recipe is easy and very yummy. The only reason I gave it 4 stars instead of 5 is that my BF and I both thought it was lacking (just a bit) in flavor....had to add a bit more salt and pepper (as well as a dash of garlic powder). I did make a few changes in my most recent batch. Not because there is any problem with the recipe as written...I just had to adjust for items that I already had on hand. I didn't have the half and half, so I used cream of broccoli soup (diluted with a bit of skim milk). I had some leftover broccoli florets on hand, so I tossed them in as well. And for the cheese topping, I combined some shredded cheddar jack cheese and fresh parmesan cheese. Enjoy this soup...it is perfect for a cold wintery day!

I tried this one evening when I was having one of my "Oh Lord what should I make for dinner nights and when I seen how quick this could be put together I was there...The only variations that I have made is I don't bake the potatoes first and I don't add hot sauce...GREAT soup my family just raves over it. Thanks for sharing

This was an easy delicious soup! I didn't have hot sauce so I substituted cracked red pepper. It added a little color and gave it a nice heat. I also added a little celery and carrots when I cooked the onion. I'll certainly make this one again!

I did make some modifications. I ommitted the hot pepper sauce. (My family wont eat spicy stuff). I had no parsley, so that was also scratched. The bacon was ground in a food processer and added to the soup when the potatoes were put in. It really gave it a nice flavor

This soup was very tasty and so easy to make! I used homemade chicken stock, blanched and baked the potatoes as one of the other reviews suggested (with garlic powder and a little salt), sauteed the onions and garlic, made the rue and threw everything into the crock pot for a few hours. The house smelled wonderful and the taste was perfect for a cool fall evening!

I used 1/4 cup dried minced onions and 1/2 tsp crushed garlic (from a jar) since I didn't have fresh and it turned out amazing. I also left the skins on the potatoes... so good!

This is a great recipe. I halfed the basil as others had said. I also used yukon gold potatos instead because they are my favorite. I also did not have a hardly any drippings since I by center cut bacon so rather than getting it real crip and adding it as a topping I just left it in the pan after cooking it a bit, not to crispness and added the onion and garlic and just left the bacon in the pan to cook the whole time. This is definetly a keeper an will make over and over. Thank you for another great recipe.

Very good! Easy, creamy, rich and filling. What more could you ask for? I really enjoyed the basil in this recipe - it gives it that extra something that puts it over the top. My husband loves potato soup but prefers his to be chunky. I had trouble with that until this recipe (before I boiled the potatoes for the soup). Chunky potato soup from now on!! =)

Another easy, tasty meal. Everyone in my family liked this one. I made a loaf of home made bread to eat with this soup and it was delicouse. It is hard to find a meal that everyone in my family likes, I am adding this to our monthly menu......

I had a bunch of leftover mashed potatoes and is this ever the recipe I will use from now on to use them up! I still baked a few potatoes, but added all of our mashed potatoes too (about a cup). (I also was a little heavy handed with the basil). I loved the flavor which had more depth than many of the soups like this one. I topped ours with cheddar cheese, the bacon, and my daughter added a dollop of sour cream to hers which she said was really yummy. I'll definitely make this again!

This soup was not very good. I did everything according to the recipe and it had pretty much no flavor. I ended up putting sour cream in the soup before eating it, but it still was just not very good. I tossed the rest of it out. It wasn't worth saving. The best potato soup I have ever made had italian sausage in it. This didn't even come close to be good enough to make again. Very blah.

Great flavors! Just the right amount of spice in an often bland dish. The directions don't include baking the potatoes before including in the soup, but this is a KEY step! I'll be making this again, but I'll bake the potatoes first next time.

great!!!!! I just made it and i diced and boiled the potatoes (12 minutes) then drained and baked them on a cookie sheet for 7 minutes with garlic powder pepper and basil sprinkled over. I subbed 1/2 cup of sour cream and 1/2 cup milk for the 1/2 & 1/2... turned out AMAZING!!! also, I cooked some broccoli and cut it up and put on top!!
