This is a great soup. I see that a lot of cooks complained about this being too thick and that they tried to remedy this with more milk. It's not the milk that makes it thick it's the roux (flour and butter mixture) reduce it and it'll be less thick.

Soooo cozy and delicious. I used 2% milk to make it lower-fat, and also used just 1 stick of butter and 1/2 cup flour. After cooking the potatoes in the microwave, I cut them into chunks and left the skin on because I love potato skins. I didn't have any green onion, so I put in some dried, chopped chives and dried, chopped onion. It was so good. It did end up a little too thick, though, so I added a little more milk at the end of cooking.

I am rating this a 4star because I think that the fat and calorie content is insane! It's a great soup that can be easily modified to be healthier. Trust me; you definitely don't need whole milk! I used 3 cups of skim milk and 3 cups of chicken broth, light sour cream, and a combination of light butter and olive oil and it still turned out ridiculously rich. I sauteed onions in the butter along with some diced celery at the start of the recipe to add a little depth and flavor. This really got rave reviews at my house and is worth the effort but you really don't have to clog an artery to enjoy this soup.

Absolutely phenomenal! I fried the bacon and used the grease for the gravy in place of the butter; it gives the soup an ever richer taste. This soup is FANTASTIC! Better than any restaurant soup we've ever had. And to think I was just shooting for 'pretty good.' My husband says it's the best soup he's ever had. :) YUM!

This was a pretty good recipe. I just felt it could have used a bit more flavor. It was a little bit bland for me, but with some garlic and extra salt, it tasted great!! Thanks for a good, quick, easy recipe!

delicious soup! I did use some vegetable broth to get it to my desired consistancy as well as chopped up some carrots and celery very finely just to add a little extra nutrition for the kids. Everyone enjoyed it, even my picky kids! Served it with crusty bread! A delicious hearty tummy warming soup! I'll make this often!

We love this recipe! I microwaved potatoes and used 1% milk. Followed the rest of the recipe as is and turned out great. I froze half of the soup and will plan on thinning with milk or broth and adding a few more fresh baked potato chunks when we reheat.

Mmmmm, very good! I did put it in the crockpot prior to adding the sour cream. It was in for about 5 hours and it did stick some to the sides...We weren't home, but next time I will watch it closely if using the crockpot. Definitely will be making again!

Wow! This was incredible! At first when I had the butter, flour and milk I didn't think that it was going to be thick enough. But then I added the sour cream and cheese and it came out amazing! A+

This is by far the best recipe I have found for this. After microwaving potatos and making the base in a saucepan I cubed the potatoes and through it all in the crockpot!! AMAZING recipe! I will make this over and over and over!!! Thanks so much for sharing!!!

We've been making this recipe for over a year now, and absolutely love it. We make half a batch, usually, which makes 4 generous servings. For leftovers, we just add a little bit of milk to the soup and heat. This soup is perfect with sandwiches or a crusty bread for dipping, and is better than what you'll get at a restaurant. No advice for tweaking - I think it's perfect as written! Thanks!

This recipe is absolutely delicious. My husband is not a soup fan but says this is the best soup he's ever tasted. He loves the chunks of potatoes and how thick it is. It gets really thick and with all roux--practically can cut it with a knife when it cools. Very tasty and I would recommend it.

Very good! I followed some other instructions. I cut down on the roux to 1/2 cup each of butter and flour. I used 1/2 chicken broth and 1/2 milk, and added 1/2 tsp each of onion and garlic powder. I didn't have any already baked potatoes on hand so I diced raw potatoes and boiled them in the broth first. I might use less sour cream next time. Overall great though! Very easy.
