Easy to make and even worked well in my stainless steel skillet instead of a cast iron one!! I was surprised at how well this came out, and my kiddos loved it!! A good way to sneak an extra serving of fruit into breakfast!!
This is an easy and tasty breakfast, perfect for ripe peaches. I thought one tablespoon of butter was not enough so I used approximately two tablespoons and also put a little cinnamon instead of nutmeg (not a fan of nutmeg) in the batter. Drizzled with a little maple syrup, it's a nice breakfast to start the day.
We made this for breakfast because we had a big bag of fresh Georgia peaches that we picked up on our way through Georgia this past week. The recipe was very easy to put together and baked beautifully. The pancake itself would have benefited from a little more vanilla, nothing that a little pancake syrup did not fix.
This made the house smell wonderful while it was cooking. I didn't actually try this but my son liked it. He didn't use yogurt but just drizzled maple syrup over it.
