Wonderful recipe! Put in about 1/2 cup frozen blueberries instead of cranberries and it tasted great! Next time I will try with half the sugar to make it a bit less sweet.

I substitute applesauce for the oil, and whatever fresh fruit I have on hand for the cranberries (blueberries work great). I make a pan every week and my family loves it.

There are more than 4 servings here - I wonder if it could be baked in a 9" square baking dish.

So good! I agree it tastes like a cookie! I used half Splenda brown sugar & half regular Splenda, 2% milk, light margarine and I added chopped pecans. I spooned it over plain fat free yogurt (which was ok) but tomorrow morning I'll just serve it in a bowl with some milk and warm it. Don't skip the cranberries (I used craisins) -they really make this dish! UPDATE: I warmed it with milk and it was good but very sweet. I've found the our favorite way of eating it is just cold out of the fridge with nothing else. I just give the kids a little baggie with some chunks and they love it -- they especially look for bites with the cranberries!

This is a great recipe. I make it often when we have house guests. The only thing I would change is to make the dish hold together a little more, so you could eat it more like a cake or bread. It falls apart easily.

Mm! This is fabulous. I'm a twenty year old university student living on my own, so one quick morning of baking provided me with breakfasts/snacks for the whole week! This definitely serves closer to eight-ten rather than four (when I'm alone that is, serving size all depends on how many hungry friends stop by, ha ha!) To make this even healthier I: Substituted the 1 cup brown sugar with a 1/2 cup of Splenda brown sugar, replaced the 1 cup milk with 1 cup of Light Vanilla Vitasoy, replaced the eggs with a mashed banana, & replaced the butter with a 2/3 cup homemade applesauce I added some more cinnamon & threw some crumbled walnuts and apples in with this before baking. Delicious :3 great recipe!

I followed the recipe exactly, and thought it turned out great. It kind of reminded me of spice cake mixed with a soft granola bar. My husband liked it, but he said he'd prefer it with more fruit next time. I'll definitely be making this again.

If you love chocolate; try adding in some chocolate chips in w/ or w/out the raisins. It tastes great either way.

I thought this was fantastic! I added about 1.5 cups of frozen blueberries instead of the cranberries and loved it. I don't think I would have liked the cranberries nearly as much. I think it would be even better with walnuts added, too. It looks like some kind of cake, but it's really not. It's very crumbly, but not dry. It's got a real old-fashioned taste and feel to it. I liked it best warm (not hot) with a little milk or half-and-half over it.

I added 2 more eggs and in the end I fill the pan with extra milk until the ingredients just barely float and give it one final stir. I cover it with plastic wrap down onto the surface and let sit in the fridge overnight. I take it out and put it in the oven when I am showering. Over baking is not an issue. Go longer rather than shorter. The baking powder should get it to full on brown to signify you are done baking it.

More like breakfast bar, this was really good. I did only use 1/4 cup sugar (plenty!) and substituted half the butter with applesauce. Any dried fruit is delicious. I have used a mixture of raisins and soaked dried apples (chopped). Another time I used dried cherries, 1 tsp. vanilla, and 1/2 tsp. almond extract. Nuts would be good too. I am going to make this weekly!

Fabulous! I didn't quite have 3 cups oatmeal left, so I slightly scaled down the recipe. I also added in about a cup of frozen mixed berries instead of the cranberries and used 1/4 c butter and 1/4 c applesauce. My kids (3 and 1 1/2) inhaled it and my husband and I weren't far behind. One batch was enough for all of us with generous helpings. I'll definitely be making this again.

This is great to eat as a snack or for breakfast. I halved the brown sugar and added a diced apple. Due to dairy and egg allergies, I used one banana in place of the egg and applesauce instead of butter. Turns out moist and smells wonderful!
