I subbed olive oil for butter, used 1/2 plain breadcrumbs 1/2 panko, added lemon pepper seasoning, and upped the garlic to two cloves. Works GREAT on a rosting rack. The chicken breasts I used were rather large, and even cut into thirds needed closer to 35 minutes. Leftovers might be a bit soggy, so I'll probably eat cold tomorrow. Will repeat this one!
