Baked Butterfish Saratoga

"I learned about butterfish in Saratoga, California at the Race Street Market where I first tried it. I wouldn't eat fish as a child and am very particular which fish and shellfish I'll eat."

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
  2. In a bowl, cream together the butter, chopped parsley, and chives.
  3. Arrange the butterfish in the prepared baking dish. Sprinkle with lemon juice, and season with salt and pepper. Dot the fish with about 2 tablespoons of the butter mixture.
  4. Bake 5 minutes in the preheated oven, until the butter is melted. Turn fillets, brush with remaining butter mixture, and continue baking 10 minutes, or until fish is easily flaked with a fork. Garnish with parsley sprigs and lemon wedges to serve.

This recipe was fine, but that's it. Not very flavorful and while it was pretty simple to make, I don't think I will be repeating it.

This was really good. Very simple recipe that you can throw together at the end of a hard day in about 20 minutes. Served with boiled red potatoes and Cajun Buttered Corn from this site. Thanks for posting

Simple but delicious. Butterfish prepared this way is the only way my kids will eat fish.

Thank you. I made this dish with this hot blonde director I'm dating for lunch. So its also a good recipe for food therapy. Completely misread the recipe and combined all ingredients with the melted butter, made on the gas grill outside and even with this mistake it was crazy tasty , looked fabby and impressed me & my date quite a bit. We r discussing what she's making for our next date ! Thanks
