Baked Brie with Pesto and Pine Nuts

INGREDIENTS

  • 1 (8 ounce) wheel Brie cheese
  • 1 tablespoon McCormick® Gourmet Collection® Pesto Seasoning
  • 1 tablespoon olive oil
  • 1 tablespoon pine nuts
  • 1 clove garlic, minced (optional)
  • McCormick® Ground Black Pepper
  • assorted crackers

DIRECTIONS

  1. Preheat oven to 450 degrees F. Using a sharp knife, trim the white rind off top of the Brie (top part only, leaving the sides and bottom intact). Place Brie in an 8- or 9-inch pie plate or ovenproof dish.
  2. Mix pesto seasoning with olive oil, pine nuts, and garlic, if desired. Spread mixture evenly over the top of the Brie round (where white rind was trimmed off). Sprinkle with black pepper to taste, if desired.
  3. Bake 10 minutes or until Brie is warmed through. Serve immediately; surround with assorted crackers.

I went to 2 stores and could not find the McCormick seasoning. I used a pesto sauce and eliminated the olive oil since it was already in the sauce. Next time I will use more pesto for flavoring but overall it was really goo & really easy!

Very easy, very good. I accidentaly left it in the oven too long but it didn't hurt it. Basil and parsley can be used instead of the special blend they suggest using.

My guests loved this. I simply used a couple of Tbs prepared pesto mixed with chopped pine nuts as the topping for one, and the other I topped with a sun dried tomato pesto with cracked black pepper to top. A few extra minutes in the oven made it perfect.
