Baked Apples on the Grill

4 medium tart apples, cored
1/3 cup raisins
1/3 cup flaked coconut
1/4 cup packed brown sugar
1/2 teaspoon ground cinnamon

DIRECTIONS
Place each apple on a piece of heavy-duty foil (about 12 in. square). Combine the remaining ingredients; spoon into center of apples. Fold foil over the apples and seal tightly. Grill, covered, over medium heat for 20-25 minutes or until apples are tender. Open foil carefully to allow steam to escape.

This was a very easy recipe and tasted great. It's a great way to use up apples that have been sitting in the fridge for too long and aren't good for eating straight. I modified it a bit because I don't have a grill. After filling the center of the apples I put them in a 9 x 5 loaf pan and put a dab of margarine on the top of each. I covered the pan in tin foil and baked at 325F for about 50-60 minutes. They came out great! I liked it with the coconut!

We changed it up a little, sliced the apple up and mixed it with the filling items. It cooked in less than 20 minutes, with a little ice cream it was very yummy!

This was very good. They took a little longer on my grill--about 40 minutes. I used McIntosh apples which provided just the right amount of tartness. A nice finish to a dinner of grilled pork tenderloin and rice pilaf.
