Great breakfast burritos or wraps. Left the milk out and use water. Great with bacon, ham or sausage.

I only needed to make one burrito so I scaled this back quite a bit. I also omitted the beans. I fried the bacon strips and set it aside. I scrambled about three eggs instead of frying and used a handful of cheddar cheese. I seasoned with salt and black pepper. I just rolled it up and served. It was nice an hot, cheesy enough and good for a late morning breakfast!

Really yummy. I bent this recipe to suit my needs this morning by using leftovers from last night. I had some leftover refried beans, taco-spiced chicken and homemade salsa from last night so I eliminated the bacon and used the chicken instead. I reheated the chicken when I cooked the eggs, just throwing it in the same skillet. I just spread the leftover beans on the inside of the warm tortilla and piled the wrap ingredients on top of the beans, topping it with the homemade salsa. We loved them. My oldest boy ate almost three on his own!

These are really good - even better if you use Whole Wheat tortillas to get your fiber in.

I also added some leftover mashed potatoes to the burritos. All I can say is BANDOCIOUS!!!!! I ate two and was full. They were a hit with the whole family, which sometime is not easy when you got four kids and a husband.

AMAZING!!! Wow, these are a new favourite. I have tried substituting mozza cheese instead of cheddar, and it is lower calories and packs a big flavour! I think I may prefer it better with mozza cheese. I have also determined that I prefer red vs. the green peppers. They have a nicer flavour. Also, I reduced the amount of cheese slightly and the amount of onion. At first it was a tad overpowering. Also - try adding fresh mushrooms... yum!

I make Egg wraps up ahead on Christmas Eve to be warmed up on Christmas morning in the microwave when the stove is busy with dinner prep. Even my pickiest grandchild loves it. I serve them with a hasbrown casserole.

This is a very filling breakfast that you can eat on the go. I make this for my boyfriend (who is a painter) and he can eat and work at the same time! The salsa adds a great kick.
