Bacon 'n' Egg Wraps

INGREDIENTS
1 medium onion, chopped
3/4 cup chopped green pepper
1 tablespoon butter or margarine
5 eggs
1 tablespoon milk
1/2 teaspoon salt
1/4 teaspoon pepper
2 cups shredded Cheddar cheese
1/2 pound sliced bacon, cooked and crumbled
4 (10 inch) flour tortillas, warmed

DIRECTIONS
In a nonstick skillet, saute onion and green pepper in butter until tender. In a bowl, beat the eggs, milk, salt and pepper. Pour over vegetables in the skillet. Sprinkle with cheese and bacon. Cook and stir gently over medium heat until the eggs are completely set. Spoon 1/2 cup down the center of each tortilla; fold sides over filling. Serve with salsa if desired.

These were really good! They probably would have been even better if I hadn't received an urgent phone call in the middle of making them, resulting in them being cooked a little too long. :)

At his request, this is standard weekend breakfast fare for hubs and that's fine by me because it doesn't get any simpler than this! Another benefit is that these call for standard ingredients I almost always have on hand.

You can stick just about anything inside a tortilla and it's bound to be delicious! I always leave the salsa on the outside for dipping. I made some with bacon and some with ham and wrapped them in foil and refrigerated them for my husband to take to work for breakfast the next day. You can use different blends of cheeses for a different taste. (pepperjack, mexican blend) Stick them in the microwave for a minute and you have a nice hot breakfast!

This was tasty even my teenager who doesn't like tortillas liked it and had 2nds! I had to incr. the recipe and it called for 3 1/2 c of cheese which was not necessary and waaaaay toooo much! I added some minced garlic, spinach, cilantro and mushrooms to the saute mixture and used wheat tort.
