20 leaves fresh baby spinach
10 uncooked sea scallops, halved
10 bacon strips, halved widthwise
Lemon wedges

DIRECTIONS
fold a spinach leaf around each scallop half. Wrap bacon over spinach and secure with a toothpick. Place on baking sheet or broiler pan. Broil 3-4 in. from the heat for 6 minutes on each side or until bacon is crisp. Squeeze lemon over each. Serve immediately.

Good recipe. I skipped the spinach, and brushed a melted butter/lemon juice/garlic salt combo on the scallops before I broiled them. Delicious!

These were good took longer to cooked because I wanted crispy bacon soo maybe pre cooking it a bit may help....

I would skip the spinach. (Too fussy to wrap). This year I made these for our club using 3lbs. of good bacon to wrap 2 lbs. of Sea Scallops. I rinsed the scallops & sprinkled on some lemon juice. Then I partially precooked the bacon 3-4 min. in the microwave on a bacon rack.This makes the prep-time longer but the results were outstanding.Once assembled ,the "wraps" were kept in the fridge until time for the party and then baked.The combination of the crispy bacon & the warm scallops were perfect. Everyone was commenting that at last the bacon was cooked instead of flabby & limp. I found that a good Ranch dip added something to the combo of flavors if you are adventursome.

This is a wonderful appetizer, and one I have used many times before. One thing I like to do, is leave out the spinach, and put a pat of cream cheese on the scallop and then wrap it in bacon! Sooooo delicious!

This was such an easy & delicious recipe! I had never made scallops before, and I appreciated the ease of this recipe. I did have to cook my scallops a bit longer than called for to make the bacon crispy though. The lemon on top is a perfect twist!

Very average. I did not use the spinach but I did like/use the idea of the brown sugar. That was a nice touch. Also, the squirt of lemon right before serving was a big improvment. If I were to do these again, I'd use more brown sugar and make some sort of dipping sauce.

I made 1/2 of these exactly like the recipe, the other 1/2 I added a dab of cream cheese. They were very quick and easy to make, and I liked the added cream cheese. Someone suggested that a dab of horseradish sauce would give them an extra zing, so I might try that next time. I will also precook the bacon half way,and then wrap it around the scallops. The bacon was not crisp enough for most of us, although the scallops were perfect. Overall, a good recipe. Thanks.

I loved bacon wrapped scallops So I decided to try these for the "little twist" of the Spinach. We honestly couldn't taste the spinach or even tell any difference from our normal Bacon and Scallops. It's Still good!!!....just didn't get the taste I was hoping for.
