4 bacon strips
2 skinless, boneless chicken breast halves
1/4 teaspoon seasoned salt
2 ounces cream cheese, softened
1 (4 ounce) can chopped green chilies, drained
2 garlic cloves, minced

DIRECTIONS
In a skillet, cook bacon over medium heat until cooked but not crisp. Remove to paper towels to drain; keep warm. Flatten chicken to 1/4-in. thickness. Sprinkle chicken breasts with seasoned salt. In a bowl, combine the cream cheese, chilies and garlic. Spread half of the mixture on each chicken breast. Roll up chicken and wrap with two bacon strips; secure with toothpicks.
Place chicken in a greased shallow 4-1/2 cup baking dish. Bake, uncovered, at 375 degrees F for 45 minutes. Cover and bake 10-15 minutes longer or until chicken juices run clear. Discard toothpicks before serving.

I had "thin and fancy" boneless chicken breast last night and no idea what to do with them. I had a taste for bacon as well so I found this recipe. Unfortunately though, I didn't have a few of the key ingredients that it called for so I had to make do... Instead of plain cream cheese mixed with chilies and garlic: I used Philly Garden Vegetable cream cheese spread. I seasoned the chicken breast with season salt, garlic salt, and pepper on both sides and then spread the Garden Vegetable on one side. I sprinkled the cheesed side with sweet basil and a little parsley before rolling it with turkey bacon and placing it in a baking dish. I didn't have toothpicks either :) so I just carefully laid each roll so that they wouldn't unroll. My husband LOVED LOVED LOVED it and he's picky. I loved it as well. I served it with yellow saffron rice (also season with sweet basil and oregano) and grapes and stawberries in baby spinach leaves for veggies. Will DEFINITELY enjoy again!

I have to tell you, while not exactly a figure-friendly recipe, it is certainly tummy-friendly! I received RAVES over this and it's so simple! I used chive and onion cream cheese, so I left out the chiles and I don't use seasoned salt, just plain old kosher salt. My family loves this and would eat it often if I could bring myself to make it more than once in a blue moon. It's RICH...but good!

Me and DH loved this. It was rich, but not so rich that it was heavy. Watch the time on this, as mine was done uncovered, after about 30 minutes.

Very good recipe. I followed a few of the other peoples advice to fry the bacon about half way done and then wrap it around the chicken. It was nice and crispy that way. This recipe is very rich!! It definately does not need any added flavor!!!

very good, i actually tried them again another way, just used garlic and herb cream cheese and wrapped them in bacon and cooked them on my forman grill, there were delicious that way also and alot less work

LOVED IT~~~ very rich and creamy, I actually used 3/4 of the cream cheese. I also cooked the bacon for a couple of minutes on top of the stove, just to give it a little crispiness. My whole family loves this chicken. Thanks for the recipe!!

Yum! Very good! The cream cheese doesnt ooze out like other cheeses. I will make this instead of traditional cordon blue from now on!
