Bacon-Topped Meat Loaf

"My family loves meat loaf- this one in particular. I created the recipe after trying and adjusting many other recipes over the years. Cheddar cheese tucked inside and a flavorful bacon topping dress it up just right for Sunday dinner!"

INGREDIENTS

  • 1/2 cup chili sauce
  • 2 eggs, lightly beaten
  • 1 tablespoon Worcestershire sauce
  • 1 medium onion, chopped
  • 1 cup shredded Cheddar cheese
  • 2/3 cup dry bread crumbs
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 pounds lean ground beef
  • 2 bacon strips, halved

DIRECTIONS

  1. In a bowl, combine the first eight ingredients. Crumble beef over mixture and mix well. Shape into a loaf in an ungreased 13-in. x 9-in. x 2-in. baking dish. Top with bacon.
  2. Bake, uncovered, at 350 degrees F for 70-80 minutes or until meat is no longer pink and a meat thermometer reads 160 degrees F. Drain; let stand for 10 minutes before cutting.

I am not a fan of meatloaf but I went back for seconds after tasting this new twist. I did change a few things. I tore up a few slices of bacon and added them to the mixture. I subbed barbeque instead of chile sauce and I didn't put as much in the mixture, then I glazed it with a barbeque/brown sugar/ ketchup mixture on top of the bacon topping and it turned out great!!!!!

My Boyfriend complained all day that I was making meatloaf and how he hates meatloaf. He ate the whole thing!!! The next day at work he told everyone how Rockin this meatloaf was. Thanks!! I changed it a bit by putting bacon all across the top...we LOVE bacon!!

Excellent flavor, but the loaf was a bit on the dense side. I ended up using 6 slices of bacon to the cover the type enough. Next time I might mix the bacon into the meatloaf and make a glaze of chili sauce instead.
