This was good, but bland. I added a small amount of chopped hot pepper and some garlic but it still needed something. I will try it again, though. Thanks for the recipe.

This was my first time making squash and zucchini. My grandmother used to make this for me and it was one of my favorite foods. It was very easy to make and really good. I could eat alone, its a meal in its self. However, I made few adjustments, because I don't do pork bacon, I used turkey bacon, which doesn't produce much grease, so I added a little cooking oil and I cooked it till it was mushy-thats the way I like it...

I added some shredded mozzy cheese at the end until mealted....makes this recipe even more delish. I used squash and zucchini and ommited the yellow onion.

I've prepared other vegetables this way (green beans, cabbage, Swiss chard), but never thought to do the same with squash. I always add some minced garlic when I make vegetables this way, and I did here too. We really enjoyed it, but then I can't imagine the addition of bacon or garlic hurting anything!

This is a great way to cook squash, though I didn't quite follow the recipe, in that I cooked the squash to near mush, like my mom used to make. The bacon gave the dish a nice flavor, and I topped with cheddar cheese. Delicious!
