Bacon Scalloped Potatoes
SUBMITTED BY:
Valerie Belley
"Valerie Belley of St. Louis, Missouri enhances her pared-down potato dish by adding a layer of sliced onions and sprinkling of crumbled bacon. 'They make the potatoes seem more special,' she says. 'The recipe can easily be doubled for company, too.'"

It was a very good recipe, husband loved it. However I did make some changes. I added salt, pepper, and garlic salt also I added cheddar and mozerella on top of it. I didn't have bacon so I used bacon bits and they turned out just as good. I did however add them before cooking instead of at the end like it says. Overall very tasty, will add to the regulars.

These were really good. I added cheese and instead of cooking bacon, I sprinkled some real bacon bits on each layer. They were yummy and it saved a lot of time. My very picky 3 year old loved them, as did the rest of my family. I also made them for a family brunch on Mother's Day instead of hashbrowns. I layered sliced kielbasa with the potatoes instead of bacon. Everyone raved. Thanks for a great recipe.

These were great! The first time we made them just as the recipe is. (The second time we doubled the recipe and added about a 1/2 cup of cheese into the sauce and sprinkled some breadcrumbs on top to use up some of the stuff in the kitchen). Both times my husband and daughter licked the pan clean. Thanks!!!

I will triple the amount of sauce next time I make this. I also decided to add bacon every two layers of potatoes. Cooked wonderfully, just not enough flavor for my husband's tastes.

These were very good. However, the potatoes took much longer to cook than stated. I would probably boil the potatoes ahead next time. I also added cheese and bacon in each layer prior to baking. It gave it great flavor! I will try the recipe again!

This was wonderful! I really wasn't sure going into it, becuse I think I messed it up a bit, but it got rave reviews, and will definately be made again. I hide my onions from little eyes, so I chopped them really fine, and browned them in with the butter. I also boiled potatoes, for 10 minutes or so, to make sure they were soft when done. I topped with cheese along with the bacon- perfect! I served them with pinapple glazed chops and home-made applesauce... Yum! Family loved it, and has requested it again! Thanks for such a GREAT recipe!

My husband loved this! It's now his favorite potato recipe. I added salt, pepper, and garlic salt as one of the reviews mentioned. I also put a very light sprinkling of breadcrumbs as another review mentioned, and then added the bacon. It came out SO well! Great recipe!

This is perfect comfort food, made with no processed ingredients. Be sure to cook it long enough to get that brown bubbly crust on the top--that is the best part! Sometimes I use diced leftover ham instead of the bacon and it is a great main dish casserole.
