this was wonderful. we loved the bacon too. it was so good we ate it all standing at the stove. i also put a onion in the bird instead of carrots. will do this again. many thanks to ya,yummy.

DELICIOUS!! Nice recipe. My first time cooking a "whole" bird. Used chicken stock instead of beef stock, and stuffed the chicken with a cut up onion and some garlic cloves. My chicken was about 5 1/2 lbs, so it took about 2 hours to cook. Came out nice and tender! Loved it. I didnt taste much bacon in the finished product though. I used the drippings in the pan to make a nice gravy to go with some mashed potatoes. Yummy to my tummy!!!

this is great. i have a similar version... i take boneless/skinless chicken tenderloins, wrap a strip of bacon spiraled around each chicken strip and bake. then for the last 10-15 min, i put a slice of mozzarella cheese on top of each one. it gets all brown and bubbly. my son LOVES this and asks for it ALOT! LOL

My first roasted chicken - it was great. I didn't use any broth because I didn't want soggy wings, and it was still very good. I used some onion along with the carrot in the cavity. I will definitely make this again - with a newborn at home, I don't have time to baste chicken endlessly, so having the bacon do all the work was brilliant.

Pretty good recipe. Overall I thought there was too much grease, but that could have been the type of bacon I used. It was alright, not one I'm going to make again anytime soon, but certainly not bad.

This is a very good roasted chicken recipe. I wish the chicken would take on more of the bacon flavor. I took another reviewers suggestion and pierced the chick all over with a skewer before adding the bacon. I don't think it made much difference. Instead of the carrots I used 1/2 an onion. We enjoyed!

this recipe is REALLY good!!! i loved someones suggestion to use the bacon pieces for the mashed potatoes.. it was such a hit. I think the broth made the best gravy too!!! i just added flour and a cup of water to it :). I blog recipes of 5 star recipes, and this one made my blog!

I made a mistake and used the lid on my roaster pan(my first roast chicken)so it didn't brown up like it should have.It was delicious though so no one minded

Really moist chicken.I used as much bacon as needed to totally cover chicken. After cooking I also used the bacon(chopped) as topping on Baked Potato that I serve with chicken.
