I made these for my grandson and his friends. They found them "ok, but not great". However, they did eat all of them...

Poured out most of the bacon grease and left just enough so the potatoes wouldn't stick.

If I were to make these again, I would start cooking the eggs, then add the potatoes to them, instead of adding the eggs to the potatoes. It tasted good, but the appearance left something to be desired. All in all, an ok recipe. Which makes me sad, because I really wanted to love this one...

Family thought these were pretty good. I used Godiva Girls tips to cut down the time(hungry family). I forgot to add the minced onion at the right time so I just threw some green onions on it at the end with the salsa and sour cream we used. I froze some and the tasted good that way, too. I would make these again.

This was actually pretty good. My kids all ate it and my husband enjoyed. I think it was lacking some kick- I had to add salsa and my husband added some hot sauce. Would i make it again...a variation of it. I actually used diced ham in place of bacon and added some sweet potatoe into the potatoes and I think i would add some peppers. Definately fresh onion. For the most part this was good

These were pretty good. Will probably use real onion next time instead of the minced.

I used the basic idea of this recipe, and the suggestions from GodivaGirl, and went a little nuts with it. Cooked four small red potatoes in the microwave and let cool a bit. Chopped up a whole white onion, half a green bell pepper, about six stalks of scallions. Cooked a package of Bob Evans Sage sausage in a large saucepan and set aside, keeping the drippings in the pan. I then cooked up the chopped vegetables (should have held off on the green onions). Once they were about done, poured in a small carton (about 2 cups) of Egg Beaters, and approximately a tablespoon of Worcester sauce. Flipped that until the eggs were about set, then added the potatoes and sausage and let it all heat through. Used 10" whole grain tortillas, some sour cream and salsa, the meat and veggie mixture, and some shredded Muenster cheese (it was all I had). Pretty good overall! My boyfriend said it was great; I'm not big on breakfast, but it was definitely a good one.

These were excellent and everyone gobbled them up. I did however double the bacon and eggs and omitted the worcestershire sauce. I sauted some onions and red bell pepper before adding the hashbrowns. I set the chesse on the side and let everyone add as much as they wanted along with hot sauce. This was a very hearty breakfast with a rich taste.

Here in Texas you see Breakfast tacos, which are really burritos, everywhere. These are a good starting point. I like to crumble some bacon in mine, and add a minced jalapeno to the veggies. Serve with lots of pico de gallo or a good geen chilie salsa.

Big hit in our house! Used chopped onion instead of minced onion (only because I didn't have minced onion). Still wonderful!

I've been making a version of this recipe for years and can cut the cooking time in HALF. However, I did make the recipe as stated to compare with mine. The eggs were dry and flat and the hash browns a bit greasy. This is my version. I take a baking potato and pierce and cook it in the microwave. While this takes place, I cook the bacon (some times I use ground sausage instead). Remove potato, cut in half to let cool slightly. Remove bacon, wipe out pan with a paper towel. Cook eggs until light and fluffy. Crumble bacon and put in eggs. Heat tortilla. Place egg/bacon mixture in tortilla, sprinkle with cheese, scoop out some potato and roll-up. My kids don't like salsa with this burrito so they use a small amount of ranch dressing before rolling up.

This recipe was just what I needed. I never have time for breakfast in the morning so I made a huge batch of these burritos and froze them. They reheated very well and were delicious.

These are yummy!! Since I like crispy tortills, I brown my finished tortilla (secured with toothpick) in a little oil in the skillet, then dip in sour cream...mmmmm
