I made this for my husband as a "to go" breakfast, he loved them, I would add more flavour to them next time, like a pepper, mushrooms or zuccini.

Breakfast tacos/burritos are nothing new in our house, but had I ever thought to eat them with salsa? Nope! I liked that addition. The best thing about these is that the possibilities are endless... you can use sausage, ground meat, veggies, etc. Thanks :)

Really good, and so versatile. You can add anything to this; chopped bell peppers, jalapeno slices, minced garlic, chopped tomato, etc. There's no limit to how creative you can be with these. I didn't have bacon on hand, so I cooked up some sausage and used that instead. I don't eat breakfast often, but when I do, this will be a favorite. Thanks.

This is very, very good, but I use 3/4 can of spray cheese instead of shredded. I also use Frank's Red Hot Sauce instead of salsa, and it seems to give it more of a kick while still keeping that breakfast taste.

I am also from Corpus Christi, TX! There isn't anything better than a breakfast taco in the morning. You can add a lot of different things...potatoes, breakfast sausage, refried beans, cheese, or bacon! Here in corpus the different combinations are endless...

I've made Egg Tacos, same proportions: 1 egg per tortilla. Only difference is that I add a spoonful or two of salsa to beaten egg before cooking. I also add a handful of shredded cheese while cooking the eggs, gives them a great texture. Jazz it up or serve it plain, it's a great and filling quick breakfast.

Yummy! Thanks for a wonderful breakfast. I loved this breakfast taco. I'm not a big chorizo or sausage fan, so this was perfect as it calls for bacon (my fav!). Definitely don't forget the salsa, it puts this over the top good. I used Old El Paso Picante sauce mostly since it isn't chunky (I'm a picky eater) and has good flavor, it's a little tomatoey but it still works. I warmed my flour tortillas on a hot dry griddle before building my taco. Thank you Wendy for sharing, I love breakfast tacos!
