To make this vegetarian friendly, I left out the bacon & replaced the chicken broth with vegetable broth. I also sauteed the mushroom & onion in 1 TBS of butter which added some depth to the flavor. It's YUMMY!

This recipe definitely put a different spin on the brussle sprouts. I thought it mellowed out the flavor of the sprouts. They can be almost bitter at times. I would make this recipe again although it wasn't one to rave about and serve to guests.

This was my first time growing my own Brussels sprouts so I was very careful to choose a recipe that would capture and showcase them at their best. I chose well. Didn't cook them any further once I tossed them with the onion/mushroom mixture (to which I had added fresh minced garlic) and they were perfectly crisp-tender and an unbelievable vibrant green (much more so than store-bought for some reason). Two bites of these and Hubs remarked we'll be growing Brussels sprouts next year!

AWESOME!! Thanks for a great way to make Brussels Sprouts so YUMMY! I'll admit that I cheated and used pre-packaged real bacon pieces so I sauteed the onion, mushroom, minced garlic, and red bell pepper in about 1 Tbsp Extra Virgin Olive Oil. I didn't use the chicken broth at all but maybe I'll give it a try next time. Hubby and I both loved them! Wish the toddlers did too...

Brussels sprouts are always a risk for a large family meal. Some folks won't eat a sprout no matter HOW you make it. But this year i didn't care. these were so good, i HOPED no one ate them so i could have them all to myself! Wow!! So tasty i made them again later in the week so i could have a batch just for me! Thanks!
