Directions

  1. Combine 1-1/2 cups flour, undissolved yeast, Italian herb seasoning, salt and garlic in a large mixer bowl. Heat water and oil until very warm (120 degrees to 130 degrees F); gradually add to flour mixture. Beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally. Add eggs and 1 cup flour; beat 2 minutes at high speed. Stir in 1 cup cheese and remaining flour to make a stiff batter. Spread batter on greased 15 x 10-inch jelly roll pan or rimmed baking sheet with at least 1-inch sides. Sprinkle with remaining cheese; top with bacon. Cover; let rise in warm, draft-free place until doubled in size, about 30 minutes.
  2. Bake at 375 degrees F for 25 to 30 minutes or until done. Cover loosely with foil during last 5 to 10 minutes of baking if cheese begins to overbrown. Remove from pan; cool on wire rack. Serve as strips or squares, or slice and use for sandwiches.

  • *Replace bacon with 1-1/2 ounces thinly sliced salami.
  • *Omit bacon and top with 1 jar (4.5-ounces) diced green chilies, drained, and 1 jar (2 ounces) diced pimientos, drained.

We very much enjoyed this bread & it's versatility. The only thing I'd change is the seasoning. It made so much bread, the proportions for the seasoning just weren't enough for us. I'd probably double the Italian herb seasoning (I imagine for those who like more subtle flavors, the current measurements would be perfect.) Can't wait to use it for sandwich bread tomorrow!

This is delicious but I agree with the other review in saying that additional spice is needed, I also added 1 additional large egg as the dough seemed too dry when mixing. I also used double the amount of cheese specified. This bread has a nice crispness on the top and the bacon adds great flavor. Fun and unique! I will be taking it to my Christmas Eve gathering.
