Bacon Cheese Potatoes

"I received this recipe from a friend who's a wonderful cook. This goes great with any main course, but it's especially good with ham."

INGREDIENTS

  • 8 medium potatoes
  • 1/2 cup finely chopped onion
  • 1 pound process American cheese, cubed
  • 1 cup mayonnaise
  • 1/2 pound sliced bacon, cooked and crumbled
  • 3/4 cup sliced black olives
  • Chopped fresh parsley
  • Paprika

DIRECTIONS

  1. Peel the potatoes; place in a saucepan and cover with water. Cook until tender but firm; drain and cube. In a bowl, mix potatoes with onion, cheese and mayonnaise. Transfer to an ungreased 13-in. x 9-in. x 2-in. baking dish. Sprinkle with bacon and olives. Cover and bake at 350 degrees F for 30 minutes or until heated through. If desired, sprinkle with parsley and paprika.

Very good. Although I did use sour cream instead of mayo, added salt and pepper and did not use paprika.

Thes potatoes are quite good. I used 8 large size potatoes and added salt and pepper. I thought they were a bit dry but I think it was because of the large potatoes. Next time I will use less potatoes and try chedder cheese cubes or crumbles instead of the processed cheese.

Great Recipe.... I made a snappy variation for those of you whole like a little heat. I used Velveeta Pepper Jack Cheese and this went over really well with my family.
