14 bacon strips, cooked and crumbled
1 cup shredded Cheddar cheese
1 (6 ounce) jar sliced mushrooms, drained
1 tablespoon dried minced onion
5 eggs
1 (5 ounce) can evaporated milk
1/4 teaspoon cayenne pepper

DIRECTIONS
In a greased 9-in. microwave-safe pie plate, layer the bacon, cheese, mushrooms and onion. In a bowl, beat the eggs, milk and cayenne; pour over the onion. Microwave, uncovered, on high for 6 minutes, stirring twice. Cook 2-3 minutes longer or until a knife inserted near the center comes out clean. Let stand for 5 minutes or until set. Cut into wedges.

Too much bacon! and I love bacon. Maybe the problem is not enough egg. I don't really care for the cooking in the microwave either. It just isn't what I was thinking that it was going to be.

This was a great hardy quiche that my whole family enjoyed. I served it for brunch, but it is filling enough to make a good dinner as well. I did not use the microwave directions, although I think it would make a great crustless alternative. I poured the mixture into a frozen deep dish pie crust, and baked at 400 degrees for 35 minutes. Very Good!!
