Oh holy these were good! I used Bisqick bc I had it on hand, used at least 2 cups med tillamook cheddar, 10-12 pieces of bacon and scallions. Go to town on the good stuff!

These were ok. They are slightly dry; I might try adding an additional tbs of oil maybe. You can add much to enhance flavor; I did add garlic and pepper but not enough. Nice change from cereal; I will be making again. Thanks!

So yummy!!! My mom used to make these when I was small and now I am making them for my son...who loves them as much as I do. Great way to grab a quick breakfast or lunch when on the go!

Easy and yummy! I made a few additions to suit my families tastes. I browned half a cup finely chopped onion in the bacon drippings and used the drippings instead of the oil. I also added 2 teaspoons flax seed and one tablespoon wheat germ to sneak in some healthy stuff.

These were quick to whip up and everything in the recipe was on hand in the kitchen. We made them for a light breakfast served with melon. Definitely a keeper.

I really liked this easy, portable breakfast muffin. I cut the recipe in half but added 2 extra slices of crumbled bacon and made sure I used 1/2 cup packed finely grated sharp cheddar cheese. The bacon flavor was throughout the entire muffin. It made 5 large muffins.

These were just OK. The bacon flavor was kind of hit-or-miss and they need a LOT more cheese. They were nice and simple though, and I think if you used pre-cooked bacon (rather than having to make up a pan beforehand like I did) that these would almost be quick enough to throw together for a busy morning breakfast. I served mine as a side dish to a steak and green beans dinner, and they make a good dinner bread option too. I think with some adjustments, this could be a pretty awesome recipe.
