absolutely wonderful!! I hate green beans and actually liked them. will also try on the grill and also try subbing the green beans with asparagus this spring.

Delicious! I blanched the fresh string beans in full boiling water for just 4 minutes, then I put them in an ice water bath to stop the cooking and retain its color. I pre-cooked the bacon, wrapped them around the beans, secured it with toothpicks and lightly seasoned them with onion powder. The beans are a bright, beautiful green color. They are crisp-tender and wonderfully flavored from the thick bacon. I made these ahead of time and they turned out great. I served these with, "Chicken Parmesan Bundles," and "Garlic Angel Hair Pasta," all from this website.

Simple, very cute, and absolutely delicous! I used young tender green beans. Served with "Hudson's Baked Tilapia with Dill Sauce."

Excellent! Beautiful presentation and downright delicious. Using just the green beans, bacon and a little seasoning was almost clever in its simplicity, although I have to admit bacon nearly always seems to improve anything you put it in! Hubs was just totally impressed and called these memorable! I blanched the beans in boiling water for just 5 minutes, then immediately shocked them in an ice water bath. I nuked the bacon just until limp and assembled the little bundles ahead of time. When we were ready for dinner I seasoned them with garlic powder (which I grabbed by accident and am kind of glad I did) then roasted them for a mere 5 minutes. The recipe called for an ungreased baking sheet but I did lightly grease it with olive oil and spritzed a little on the green beans too. They were done perfectly - bright green and crisp-tender, and I think had I cooked them as long as the recipe directed they would have been overdone. Making these ahead of time worked well and eliminated the fuss as I was preparing the rest of our dinner. We really enjoyed these pretty as a picture green beans!
