Bacon, Avocado, and Pepperjack Grilled Cheese Sandwich

Directions

  1. Lay bread on a work surface and spread butter on one side of each slice.
  2. Layer bacon, 1 slice of cheese, onion rings, avocado slices, and another slice of cheese on top of the unbuttered-side of the bread; top with second slice of bread, buttered-side facing up.
  3. Cook sandwiches in a skillet over medium heat, flipping once, until both sides are golden brown and cheese has melted, about 3 to 5 minutes per side.

Nice change of pace from the regular grill cheese sandwiches routinely served. Used caramelized onions in place of the red onion as that's all I had and served with Roasted Red Pepper and Tomato Soup also from AR. Easy, peasy dinner which everyone enjoyed!

The only thing I did differently was to use sourdough sandwich bread that is thinner than what the recipe called for. I put the cheese next to the bread on both slices, and I used the same pan (wiped out) that I used for frying the bacon. I'd recommend that if you also use thinner bread like this that your food all be at room temperature so the cheese will melt appropriately! Thanks for a very yummy lunch!

I really loved this sandwich. Great flavor combination. I added some banana peppers to it. I will be making this again!
