I loved this. I'm eating low-carb and really needed something different to do with eggs in the morning. Spinach and nutmeg go so well together, I can't imagine skipping the nutmeg. I just used a medium skillet and filled it with fresh regular spinach, salted & peppered, covered, and let it wilt while I beat the eggs with the onion powder, nutmeg, parmesan and a splash of water for fluffiness, then poured over the wilted spinach. This is super quick, easy and very tasty. It will definitely be in my regular rotation, thanks!

This had good flavor (I left out the cheese), but I felt like something was missing (probably the cheese :P). But actually, it seemed kind of dry-maybe adding tomatoes or real onions would have helped?

The best omelette I've ever made! Added a touch of milk when beating the eggs but otherwise exactly to spec. Delicious - and the nutmeg is a wonderful addition.
