I made this for my boys this morning. I used whole wheat white flour, lowfat buttermilk and olive oil mayonnaise. I did read through the reviews before I made them and I did add a little Liquid Smoke, some fresh ground pepper and I upped the bacon to a full cup. The kids seemed to like them....my younger boy ate two and a half and my older boy at three and a half. My husband took most of the leftovers to work this morning, so I don't know if he liked them or not. I served them with scrambled eggs and a fruit smoothie. NOTE: I mixed up my muffins a little differently. I wisked together the dry ingredients, then folded in the bacon and tomatoes. After those were evenly distributed, I then lightly folded in the mayonnaise/milk mixture. I had a nice, fluffy muffin.
