BBQ Potatoes with Green Onions

6 large potatoes, peeled
4 green onions, finely chopped
2 tablespoons butter
salt and ground black pepper to taste

DIRECTIONS
Preheat an outdoor grill for high heat.
Microwave potatoes on High 5 to 8 minutes, until tender but still firm. Cool slightly, and cube.
Place cubed potatoes on a large piece of foil. Top with green onions. Dot with butter, and season with salt and pepper. Tightly seal foil around the potatoes.
Cook on the prepared grill 20 to 30 minutes, until tender.

Pretty darn good and very easy to make. They can stick to the foil so extra oil or butter is required. Also, I like them with regular onion and bacon bits. Just prior to serving, I use the uncooked chopped green onion, so that they look fresh instead of dried up and browned.

I used new potatoes instead and it turned out very well, except I used too many, so they didn't all touch the bottom of the foil and get crispy edges.

These were very good! It might help to spray foil with Pam cooking spray so potatoes won't stick! Also, next time will probably put in more butter and maybe some bacon bits!!!

We enjoyed these with our BBQ last night. I added a bit of minced garlic to the packet, because we love garlic! They turned out pretty good. Nothing exceptional, but pretty good.
