I've made this cake twice (for my 4-year-old's birthday party, and then for my 1-year-old's birthday party) and I had tons of compliments both times! Everyone raved about it, and even my hard-to-please in-laws said it was the best carrot cake they'd ever had. I have to agree with them, it is a great recipe. The only changes I made include: using 1 cup of unsweetened applesauce and 1/2 cup oil instead of 1 1/2 cups oil, 1 cup of sugar instead of 2, all whole wheat flour, and about 1/2 teaspoon of nutmeg.
