I attempted to make this cake and use it as a yule log (jelly roll) type cake. I put the pineapple and carrots in the blinder until smooth, and followed the rest of the recipe as written. It glued itself to the towel which led to a cracked and hard to roll cake. Once I frost it, it will be fine, but not as great as I had hoped... it's for a pot luck party. I think it was all the oil, it's just too soggy to be used as a rolled cake. I used all organic ingredients, and 1/3 wheat flour. The flavor is so-so, I prefer the box mix with the added pineapple and raisens (the deluxe recipe on the back of most boxed carrot cake mixes).

This is my husbands favorite! I always use 2-9inch cake pans and make a round, layered cake. Spectacular, moist cake that gets devoured every time. THANK YOU!

HI IM KRYSTAL I'M 14 YEARS OLD AND I LOVE TO BAKE SO I FOUND AND I MADE THIS CAKE ABOUT 5 OR 6 TIMES AND EVERYTIME IT COMES OUT GREAT EXCEPT THE FROSTING NEEDS TO BE HALVED BECAUSE YOU GET DOUBLE WHAT YOU NEED AND IT GOES TO THE TRASH UNLESS YOU DECIDE TO MAKE TWO CAKES

I just ate my first piece of this "not so awesome" carrot cake and know now that I should've went with my gut instint and NOT put the full cup and 1/2 of oil that it called for. When you take the cake out of the oven it is literally sizzling in grease ! I at this cake off of a paper plate (bad idea)...there is so much OIL in the cake that it soaked through the first plate so I had to throw another on under it and it soaked through that one! I liked the idea of adding the pineapple and using pecans rather than walnuts, but I think I shall try another recipe next time.

Very easy and great cake! I did make it in a two layer round pan though to make the presentation a little fancier. Used the preshredded carrots in the produce section to make things easier on myself and surprisingly, they worked well. I did not have any issues with the oil as others have.

I love this carrot cake recipe. It is all that carrot cake should be. I have made this one two times (one for easter and one for a birthday cake). I do not use the icing recipe included. I use a different one from this site. GREAT RECIPE!!

Very easy to make, great taste and texture. I cut the recipe (only had 2 cups of grated carrots)to only make 2/3 of the batter. I used a 9x9 cake pan and it came out just fine. I didn't make the frosting but will probably try it next time.

I am writing this review on the frosting only. I used a boxed carrot cake mix and jazzed it up with pineapple, golden raisins and fresh, grated carrot, baked in a Bundt pan and halfed this frosting recipe. The taste is so yummy. Not too sweet, as many frostings are. I would guess it may need a little more powdered sugar for a layer cake as mine was a little on thin side but just what I wanted for a Bundt cake! Super frosting!!

This is by far the most requested dish people ask me to bring to any function! I usually double the icing recipe figuring if you are going to eat carrot cake, which is one of the highest caloric desserts made, you may as well make it great.
