This is my favorite way to prepare scallops. They're so flavorful they don't really need much more than a little butter and lemon. I like to serve them with a nice rice pilaf and vegetable.

Sauteed Scallops with Watercress and Corn Salad

This is a lovely light salad. Gently sauteed scallops, still warm from the pan, are presented on a plate with watercress, corn and shredded carrots that have been tossed with a mustard vinaigrette. Makes two elegant salads.
