Green Goddess Salad Dressing

Here 's the classic version of this delectable dressing - anchovies, vinegar, tarragon, parsley, chives, mayonnaise and all. Don't pinch on the anchovies, it's the secret ingredient.

This has the taste of yesterday updated to meet today's palates. I love this dressing and it was one of two signature dressings I used as the executive chef at a Washington, D.C. seafood restaurant. Great stuff. Don't be put off by the use of anchovy paste; it is not noticeable and the dressing is very memorable. Works especially well as a Caesar substitute!

Vegan Goddess Dressing

Tofu and olive oil are mixed together until thick and creamy. Then a whole parcel of herbs - parsley, rosemary, basil, and tarragon - are stirred in, with vinegar and soy sauce to taste.

It's amazing how only four ingredients can taste so sensational - honey, mayonnaise, lemon juice and mustard. Whip it up just before serving, and try it with chicken salad.

Honey Mustard Dressing I

You 'll need a bowl and a whisk and a salad waiting to be dressed. Soy sauce, garlic, mustard, and honey are stirred into mayonnaise until thick and creamy. That 's it. Spoon over greens with bacon bits or use to make a great ham salad sandwich. 

Green Goddess Chive Dressing

This creamy dressing is rich with herbs--chives, garlic, scallions and tarragon--and uses far less anchovy than most green goddess dressings. A delightful green salad or seafood topper!
