Ingredients

  • 1 Chilean Hass avocado
  • 2 oranges
  • 1/4 cup red onion, finely chopped
  • 1/4 cup radishes, chopped
  • 1 tablespoon fresh ginger, grated
  • 1/4 teaspoon salt

Directions

  1. Cut avocado in half, remove pit, and peel. Cut into cubes and place in a medium bowl. Peel and section oranges over avocado in bowl so juice can drip into bowl. Cut orange sections into bite-sized pieces. Add radishes, ginger and salt and toss gently to mix. Cover surface with plastic wrap and chill until ready to serve.

Made this with pork loin and used it as a topping. it was great! the ginger flavor is subtle...
