Avocado Corn Salad with Pine Nuts

"This is a great salad to go with just about any meal. It's very quick and easy to make, and it tastes delicious."

INGREDIENTS

  • 1 (10 ounce) package chopped romaine lettuce
  • 1 cup bottled Caesar salad dressing
  • 1 (15.25 ounce) can whole kernel corn, drained
  • 1 avocados - peeled, pitted and diced
  • 8 cherry tomatoes, halved
  • 1/2 cup pine nuts

DIRECTIONS

  1. In a large bowl, mix the lettuce, corn, avocado, and tomatoes. Drizzle with dressing and sprinkle with pine nuts. Toss and serve.

Omitted the pine nuts because I didn't have any and added some chopped cucumbers because I love them! Good combo of flavors, caesar dressing was a little heavy... tasty but heavy. Might try a vinagrette to make it more summer-y. Still very good!

I thought it was a good salad. And it was different, which is nice when you eat a lot of salads. It would be good with chicken or steak on it too, if you wanted it for a full meal, rather then a side salad.
