Isn't 2 stalks of celery an awful lot? I overwhelms the dish. I would try 2 ribs instead.

I didn't want to spend money on cajun seasoning at the grocery store, so I made a small batch of Emeril's "Essence" cajun seasoning: 1/2 tsp each of salt and garlic powder, 1/4 tsp each of black pepper, onion powder, cayenne pepper, dried oregano, and dried thyme. The amounts add up to 2 1/4 teaspoons of spice. I used 1 tsp as directed in the recipe. Next time I may use the entire amount. Thanks for a wonderful recipe!

Great recipe! I followed the advice of several of the reviewers and used chicken broth for some of the water and replaced the thyme and sage with oregano. I also added a teaspoon of sea salt. I soaked the beans overnight and then put everything except the sausage and rice in a crock pot and cooked on high for six hours. I didn't saute the vegetables first, just left out the oil and added them right in with the beans. I added the sausage and cooked for an additional half hour while I cooked the rice. It was just spicy enough for me and not too spicy for my kids. Thanks for a keeper!

I followed others' advice and doubled the cajun spice amount. I couldn't find andouille sausage, so I got louisiana hot links, and the beans turned out way too spicy. Our noses were running! Next time I will double the cajun spice, but add a more mild sausage. I also added 2 tsp. salt and it really needed this. It would have been way too bland without salt. We made burritos the next day with the beans and they were so good! I might make this recipe again just to make burritos.

I made this for Fat Tuesday. I followed the recipe exactly except that I used Chourico Hot Portuguese Sausage, recommended by the butcher. It was great. I felt like I was in the NOLA French Quarter for dinner.

This is a great red beans and rice recipe! I made it as directed, except used vegetable oil instead of olive oil (next time I will use less) and I accidentally used a tablespoon of cajun seasoning instead of a teaspoon! I thought it gave it just the right amount of spice, but it was too much for my kids. I will make this next time I need a red beans and rice fix.

Wonderful dish! Easy to prepare, very well received by the company we served it to, and it left the house smelling really good. I followed the recipe pretty much too the letter except that I used smoked sausage. Will definitly make this again!

Really great. I had to substitute a little on the spices to adjust to what I have available in my kitchen and also added about 2 teaspoons of salt and 2 teaspoons of black pepper and it came out really great. Husband raved. Will definitely make again.

This was delicious! I didn't actually measure anything just threw the ingredients together but it turned out great. I mixed the rice in at the end (rather than serving it over rice) and that added some depth in flavor as the rice absorbed the seasonings.

I made this 2 weeks ago and it is the best. I am preparing this dish again today. However, I did adjust the reciped based on other reviews- 3 cups water & 2 cans beef broth. I also added a ham shank-DELICIOUS!!!!

ok, i live in metairie which is 10 minutes from new orleans and i have a recipe for red beans but i am always looking for new addition or techniques. This recipe was followed exactly. This recipe just isn't authentic and not worth the time. sorry

This recipe was delicious, and very flavorful! I made a few adjustments after reading the comments. I used chicken broth instead of water, I doubled the cayenne, used Oregano in place of Sage, tripled the Cajun seasoning, and added some Bourbon St. Seasoning in addition. My husband and I really enjoyed this, thank you!

Great Recipe! I did take advice from others and half way through cooking the veggies and beans I added a few chicken bullion cubes. I also added dried red pepper, celery salt, and a dash of Jamaican seasoning for a added sensational flavor. I didn't used the sausage recommended, I just used smoked kielbasa! My husband loved it!! Thank you for a great recipe!

This was delicious. I needed to use extra seasonings such as salt, cumin, oregano and the Cajun seasoning (Simple Cajun Seasoning also from this site)but that's probably because I made mine with leftover ham instead of the andouille sausage. I will definitely be trying this recipe again with the sausage and we thank you for a yummo meal last night MIAMI BEACH!
