I tripled everything which equated to a pound of bacon (used thick cut) and a bag of potatos. Used yellow gold potatos. Excellent. Was enough to feed a large crowd. I also made hours in advance and just warmed in oven slightly before serving.

I made this tonight with sliced red potatoes - and used a medium sized shallot instead of onion. It was FABULOUS! My husband appreciated it very much. I will be making this again - and even for company or potluck. It was very easy as well. Thank you for this great recipe that will be in my family for years to come.

Sooo good! The only thing I did differently was to throw the finished product in the oven at 350 for about 10 minutes. Oh & I only used about 1/4 of an onion, but that is only because I am not a big fan. Will totally make again...

Looove this! And it's totally approved by my German hubby (although his family tends to go more with creamy cold versions of potato salad...)

The salad was very good. I gave it four stars because I didn't feel there was enough sauce and it was a tad too sweet. I will definitely make it again, but I will double the sauce and use less sugar.

I am anything but big on potato salad, but it is my fiance's favourite. So, we decided to try this, although we both thought that a potato salad without mayo would be weird. So wrong! It knocked our socks off! Now, I have changed my mind about potato salad, and my fiance even said that it was better than his mother's, which was an all-time favourite of his! The only change I made was to double the bacon, and saute with the onions instead of frying it, because we really don't like hard, crunchy bacon.

Great recipe. My husband hates traditional potato salad so I tried this one out on him and he loved it. I made a little extra sauce and am glad I did as the potatoes needed it. I also used turkey bacon instead and it was super yummy.

My family LOVED this recipe and I think with the addition of a little dijon mustard it would be perfect. It was gone way before any of the other leftovers from our dinner and I am sure to use this one again. Next time I make it, I will cut down a little on the onions.

german potato salad is an all around favorite with most who have tried it. This recipe is similar to my best friends family recipe (my alltime favorite!). She uses white pepper to taste also fresh purple onion (raw and chopped fine)

This was a HIT at the reunion. At first I was worried about the amount bacon grease because it isnt really measured in the recipe, and some bacon produces more grease than others...but when the onions cook in it, the consistancy is reduced so it really turns out perfect.

This by far is the best potato salad I've ever had!! I didn't have parsley... but I just excluded it, but still, I love it!! I've always liked potato salad, but I've never tried any that didn't use eggs or mayo. It's different and probably won't go bad in the sun at a picnic because it's not kept chilled. This is fantastic!! I will definitely be making this again~ THANKS!

I have been making this recipe for years except the one I had did not specify white vinegar so I had always used the red wine vinegar. I tried this one with the white and hubby and I both thought it was good but we both agreed that the red wine vinegar made it more flavorful.

My husband's mother was German, and we lived in Germany for several years. This was awesome! We eat it cold, however, so I let it cool off in the refrigerator. He liked it even better than the kind his sister makes. Next time I will cut down on the sugar and add a little more vinegar according to our taste, but it was fantastic following the recipe too.
