Authentic Mexican Enchiladas

This is the real thing! Corn tortillas are dipped in a home made sauce, fried, filled with Mexican queso fresco, then topped with sour cream, lettuce and tomato. My mother in law is from Mexico and taught me to make this delicious dish! Serve with authentic refried beans, it has a taste different from the norm--so good!

Corn tortillas rolled up with shredded chicken and 2 kinds of cheese, and then served with a zesty salsa verde. This dish can also be made with cooked pork or beef.

Chicken first simmers in tomatoes, chile peppers and creamy soup to seal in the flavors, gets wrapped in tortillas, and then bakes in that same stew. Top with enchilada sauce and Cheddar. You'll need to marinate the chicken in your favorite marinade before cooking begins!
