An easy and quick way to prepare eggplant, and tasty too! I serve it with sliced fresh tomatoes, fresh green beans and bread and butter. An inexpensive meal from my childhood and still a favorite!

Really, really good. Will make you an eggplant lover. Cheese, bread crumbs, parsley, garlic and onion are mixed in with the cooked eggplant and formed into patties. A few minutes in hot oil and you have your croquettes.

Cooked eggplant is mixed into an egg, breadcrumb, cheese, and veggie mixture, chilled and then shaped into tiny balls. They 're double dipped in flour and fried in oil until crusty and delicious.

This eggplant goes well with some steamed green beans and French or Italian bread. Although the recipe calls for seasoned bread crumbs, you can use regular bread crumbs if you wish. Adjust the amount of red pepper flakes according to your taste.

Great appetizers. Cooked eggplant is pureed with flour, egg and pepperoncini pepper and then dropped by teaspoonfuls into hot oil. Serve with toothpicks, salt and pepper.

Eggplant centers are cooked with onion, garlic, and seasonings, then re-stuffed into the eggplant, coated with tomato sauce, cheese, and bread crumbs, and baked until tender and bubbly. 

Easy Eggplant Pita

A splash of olive oil in the pan begins the process. Then the veggies are tumbled in - chopped eggplant, mushrooms, onion, and bell pepper. A shake of garlic powder, and when everything is cooked and yummy, it 's plopped into a pita pocket. Top with Mozzarella cheese, and serve.

This is a great way to use those summer eggplants! These delicious rolls are perfect for parties and holidays. To save time and clean-up, you can probably use a good, jarred tomato sauce instead of the homemade tomato sauce. Milk or half-and-half can be used instead of the whipping cream.
