Au Gratin Taco Bake

INGREDIENTS

  • 1 pound ground beef
  • 1 (4.9 ounce) package au gratin potatoes
  • 1 (15.25 ounce) can whole kernel corn, undrained
  • 1 (14.5 ounce) can no-salt-added stewed tomatoes, undrained
  • 3/4 cup milk
  • 1/2 cup water
  • 2 tablespoons taco seasoning
  • 1 cup shredded Cheddar cheese

DIRECTIONS

  1. In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the potatoes and contents of sauce mix, corn, tomatoes, milk, water and taco seasoning. Transfer to a greased 2-qt. baking dish.
  2. Cover and bake at 350 degrees F for 65-70 minutes or until potatoes are tender. Sprinkle with cheese. Bake, uncovered, 5 minutes longer or until cheese is melted.

Loved it! There wasn't any leftovers. There was a few things I did different though. I added more cheese and some onion. I didn't have any Au Gratin potatoes or stewed tomatoes so I use Scalloped potatoes and a can of Rotel. Thanks for sharing!

I thought this was really good! It was easy to make & tasted great. I may add a little more cheese next time because we love cheese, but I don't really think it's necessary to make it taste better. The only thing I did different was add the whole package of taco seasoning because I didn't want to waste what was left. I'll be making this again. Thanks!

My family loved this dish. Especially my husband and son who don't like tomatoes they ate them all up! No leftovers. I put the whole packet of taco seasoning in to add some more zip to it. This one is a keeper.
