This is a nice and simple cold salad that is nothing more than asparagus dressed in a Chinese-influenced vinaigrette topped with sesame seeds. It's a great way to celebrate the arrival of the asparagus crops!

My mom has a large asparagus bed, so I'm kept well-supplied with asparagus all spring. I helped her plant it years ago and have a 'My Most Embarrassing Moment' story from that day - I planted all the asparagus with the roots facing up! I still get kidded about it.

This is a quick, easy way to saute asparagus. The dish has a light flavor and makes a great accompaniment to Italian meals. I make this year-round, but we especially enjoy it on Thanksgiving.

This cold asparagus dish is tender, tasty and easy to create. The zesty lemon and the salty prosciutto work perfectly together to add wonderful flavor and great presentation to a vegetable that many are cautious to try. I have had people who normally turn their noses up at asparagus thoroughly enjoy this side dish.

My sister served this salad one night when we were dinner guests. It's very easy to prepare, and the cool tangy change from eating asparagus as a hot side dish makes one sit up and take notice. My brother-in-law gets credit for creating the unique delicious salad. -Kathy Willis, Pryor, Oklahoma
