"This is an easy recipe, very quickly done and delicious. Delightful pork loin medallions simply simmered in cream of asparagus soup. The meat comes out fork tender. Serve with rice and asparagus stalks, if desired."

3 pounds pork medallions, each about 1/3 inch thick
2 (10.75 ounce) cans cream of asparagus soup

DIRECTIONS
In a large skillet saute pork until browned on both sides. Add soup, coating the meat well. Cover skillet and reduce heat. Let simmer over very low heat for 30 minutes.

I found this dish easy to prepare and cook. Cook it with White rice, and fresh Aspargus and you have a really healthy meal, that tastes realy good. My boyfriend really enjoyed it.

My kids hate everything but they liked this. It was quick and easy. I had no cream of asparagus so I used cream of mushroom and it was great. A keeper!

Great recipe! VERY easy to make! One comment though, I made it with asparagus on the side, and it was a bit too much asparagus...BUT, the rice was a terrific side dish with this. I will definately make this again!

Very good. The store did not have pork medallions on hand so I ended buying a pork tenderloin and cutting it in slices and pounding it thinner. This worked well and was so tender. (The butcher helped me with that one) Served with white rice and green beans.

This recipe was super simple and delicious. Will make again. I added a splash of Worcestershire sauce for flavor when I sauteed the meat.

This is a great dish! Easy and quick, and tasted great served with rice. Next time, change the asparagas soup to cream of mushroom.

Gourmet results from a super easy recipe - husband loved it. I seasoned the pork with salt, pepper and onion powder, sauteed in olive oil and butter, used cream of celery soup and added worcestershire.
